You do need a a visa to enter mainland China. In your case, since you are already in China with an one-entry visa, if you leave China, you need another visa to get back in. You can apply for a visa in Hong Kong. China Travel Service (H.K.), for instance, can assist travelers to get their China visa in one to three days.
